margin-bottom: 10px;">

Hi Everyone,

If you've been reading this blog, then you know I've been training for my first Half Marathon. Yesterday was the big day!

The reason I'm blogging all the details, is because part of the reason I felt comfortable enough to sign up for the Half was this blog: www.ohsheglows.com where Angela Liddon blogged, in great detail, everything about her first Half Marathon. After reading that, it made it less scary for me, and it gave me a really good idea of what to expect. So, thank you Angela! Hopefully, some of you reading this blog will be inspired to give it a try, or feel comfortable signing up for one after hearing the details of my day.

It wasn't too long after I read Angela's post that I saw Tosca Reno's invitation on her blog to join her team and complete the exact same Half Marathon that Angela had blogged about. The timing seemed perfect, too, since the date of the Half was just two days before my 39th birthday. And, that Tosca's Eat Clean Diet Team was in support of Team Diabetes Canada fundraising for the Canadian Diabetes Association. My Dad, whose birthday just happened to be the day before the Half Marathon, has diabetes and checks his blood sugar daily. He is able to maintain his condition with a combination of watching what he eats and walking, thankfully.

Anyways, once I signed up for the Half Marathon - I though "Oh crap...now I'm really doing it!" And, the training began. I decided to follow Hal Higdon's Novice Half Marathon training guide. It has you running at least three times per week, gradually increasing your distance. One of those runs per week is a "long" run. The longest run I had before the big day was 16.1k. The actual distance of the Half Marathon is 21.1k, so I hadn't ran that far before. I started Hal's program early, to give me a little extra time in case I missed a week here or there, and I was planning to try at least an 18k run before the big day. I had some knee "issues" though, and didn't make it that far during training. Then, I was nervous I would make the knee even worse if I kept training for further and further distances, so I decided to stick to Hal's plan so I wouldn't wreck my knee before the marathon day even arrived. That would have sucked!!

Here are all the details...

My (wonderfully supportive) hubby and I drove to Toronto on Saturday, had a delicious pasta dinner, then checked into our hotel. I had decided on the Novotel in North York, since they were one of the host hotels for the marathon, and they were the closest hotel to the starting line. This turned out to be a good decision. Our room was on the 19th floor, and overlooked Mel Lastman Square, which was basically right at the starting line. This was perfect, because the other hotels were more downtown and you would have had to catch a shuttle to get to the start of the race.

The Half Marathon started at 8am sharp, and I needed to meet up with Tosca and the Team at 7am sharp! Before all of that, though, I had to get dressed, get hydrated and fuelled up on a decent breakfast AND make sure I had plenty of time to use a real bathroom so I could avoid the dreaded Port-a-Potties on site. Yes, I am a bathroom snob!!

I wanted to be in bed early, so I hit the sack at 10pm. I fell asleep at around 11pm, woke up at 1am feeling like it should be time to get up (I hate when that happens!), finally fell back to sleep around 1.45am, then woke up just before my alarm at 5.25am. Oh. That's early!! I had a Kashi Bar and some water right away, and turned on the coffee pot. Normally, I'm a tea drinker, but I only like tea in my own house. Weird, eh? So, coffee it was. I had the coffee while I got myself ready, then Brent and I headed down to the breakfast buffet that was included in the room price. It was excellent! I ended up just having fresh melon, which I knew my tummy could handle before a big run.

Back up the room, I gathered everything on my checklist - PowerBar, Garmin watch, MP3 player, Powergel for the 10k point, sunglasses, hat....got everything? Check.

We headed down to meet Tosca and her Team. Soon after that, the whole team had arrived and we began our warm up and "moment of inspiration" lead by Tosca. I have to say, she is such a genuinely warm and nice person. She's very open, kind and so friendly. Very down-to-earth. It was such a pleasure to meet her. Her story is so inspiring, and she is in such great shape. Her arms are AMAZING! At one point I touched her bicep, and told her how great her arms looked (Poor Tosca, being groped by me...!) She says something like "Oh, that's just because my t-shirt is too tight and it squeezing my arm in that spot..." Nope. It's because she's worked her butt off to have great arms. That's my new goal - Thanks Tosca! Anyways, I have to say meeting her and chatting with her was one of the highlights of the entire experience for me.

Around 7.40am or so, we all headed over to the starting line. My friend Judy had told me about "Pace Bunnies". These are people holding signs at the start line with expected finish times that you can join to help you stay on pace. It's so hard to keep your regular pace when running with thousands of people! So, for me, this was a must. I found a very friendly Pace Bunny named Shaunna who held a 2.30 sign. I asked her a few questions, and found out that she was planning to run 10 min, walk 1 for the entire duration. Although I think that's a great strategy, I was a little nervous about stopping, since I've been training to run the whole thing, and didn't want to change at the last minute. But, I figured, if I started running with her group, it would even itself out and we'd be close enough for me to stay on pace. Then, I ended up meeting Elaine, a really nice person who happened to be standing next to me. She travelled from Montreal to run, was 41 (or 42?), and has two daughters. She was planning to run the whole thing too, and her finish time goal was the same as mine - between 2.30 and 3.00 hours.

It was so crowded at the start of the race that it took us 3 minutes to get to the start line! We ran with the Pace Bunny for the first 10 minutes, but then when they stopped to walk, Elaine and I just kept running together. We hit the huge Hog's Hollow Hill early in the run, and I have to say it was pretty intimidating. The Pace Bunny had told us that she planned to power walk the hill, and that she felt a first time racer shouldn't try to run up it...but Elaine and I just powered up together. It was so hard but it was a great feeling when I got to the top and knew I ran up the whole hill. This was sooo hard. When I got home I checked my Garmin, and I was at 103% of my heart rate maximum at this point in the race. Whoa! After that, we slowed our pace a bit to let the heart rates come down a little. Here's the pic of that hill from last year's race...

We fell into a great rhythm running together. It was an absolutely PERFECT day to run, just cool enough that I wasn't overheated, a really nice breeze, and best of all SUNSHINE! It was so cool to see so many people all running together. All ages, all shapes and sizes. I loved it! All the colours were changing on the trees and it really seemed like a dream, it was really that gorgeous. At one point we were running (I think this was the Rosedale area) and that was one of the best moments of the race for me. I was just thinking how hard, and how long I had trained for this, and how many times I had wondered just how this day would be, and now...here it is. I was so grateful to have met Elaine to run with, and we were chatting a bit and keeping each other company, passing the kilometres together, and encouraging each other while we shared the whole experience of the run.

Around 8km, my knee started to hurt. My worst fear! I kept running, and it got a little worse...then it got better. I was really thinking, mind over matter at this point, and trying to think of everything else I possibly could to stop from thinking about my knee. Around the 16k point, I thought "Wow, only 5k left!" I was thinking about the ladies in my running group in the spring, and in August, and how many times we ran 5k together - and telling myself "5k is nothing, this race will be over before you know it!"

Then, at 18.5k, I hit a wall! I felt like my body was forcing me to stop - like I had nothing left in me at this point. I had to slow to a walk and try to recover so I could build myself back up to running. Many, many people were walking at this point. But, many people were still running past me! I told Elaine to go on, and watched her run as I tried to gather myself together so I could run again. I was feeling horrible, mentally, because I knew there was less than 2k left, and I knew I should be able to do it. There were lots of spectators cheering, just random people who must have done it before and wanted to be there encouraging the runners. Let me tell you, encouragement was what I needed! I walked for a minute, then tried to run again for a bit, then slowed to walk again. Then I saw this one guy holding a sign that said "Pain is temporary, but Pride is Forever!" Well, that was just exactly what I needed to see at that moment, because I thanked him and got my buns running again. Then, I saw a member of the psyching team, saying "Less than a minute and you'll be at the finish!" which I really didn't believe because at this point it seemed like forever. Then I came around the corner, and there was the finish line! I picked up speed and tried to look like I wasn't dying, since I knew that the race photographers would be there taking pics as you cross the finish line, and damn it, I wanted to look as good as possible in that pic!!

It was great to see my hubby right at the finish line waiting for me! He had tried to catch up with me at the 10k and 15k point, but all the roads were blocked off because of the race. And, I told him my expected times, but I was a little ahead of those times, so I had a feeling I wouldn't be seeing him before the finish.

I got my medal, which is like an Olympic medal! Seriously, it is huge and heavy! It kind of looks like pewter. Very nice :)

After the race, I headed over to the First Aid tent to get some ice on the problem knee. All of the volunteers were super-friendly and very helpful. Then, Brent and I walked around 2km (my knee was not happy with this!) to meet up with the Team at Cora's Restaurant for a "restorative" breakfast. Honestly, food never tasted so good! Brent and I sat a table with Vinita (who has the best job ever at Robert Kennedy Publishing), and her boyfriend Guy, and had a nice conversation. Tosca, her husband and some other people from the team were beside us. I'll definitely be back to Cora's for breakfast next time I'm in the "big city", it was truly wonderful - fresh, tasty food that is also wholesome and healthy - what could be better!? After thanking Tosca and the Team, and being thanked right back, Tosca gave me a hug (I'm sure I was very nasty smelling, and I warned her, but she hugged me anyways!) Brent and I started the long trek to the parked car.

We happened to drive by Lululemon on Yonge Street, SCORE!! We got a parking spot right outside, and I was lucky enough to get myself a couple of self-congratulatory and pre-birthday gifts. I seriously have a Lululemon addiction, and am admitting I NEED HELP!!! Seriously. It is a real problem.

However, it was the PERFECT way to cap off what was one of my best weekends ever. I really believe that GOOD THINGS HAPPEN WHEN YOU GO FOR IT, and I think this past weekend is proof!

Thanks everyone for reading this looong blog report, but mostly thanks for your support, not only in this weekend's events, but also in my Weekend to End Women's Cancers and Race for the Cure. We're so far away, but I can't help getting emotional watching the rescue of these brave men!

My final 3.2k run before the big day of the Half Marathon (this Sunday!) is scheduled for today. I will find out on Sunday.

I was a little scared when I saw pics of the route I'll be running. I was told that there aren't many hills along the route, and ">Hi Everyone!

I hope you're all enjoying this amazing weather! The humidity is gone (for now!) and today we have sunshine and the perfect day.

I'm finally finished my fundraising for the Weekend to End Women's Cancers and my Half Marathon. Thanks so much to my new Walk to Run Group for participating and helping me reach my goals!

Speaking of my new Walk to Run Group, what an inspirational group of women! Running with a group is very motivating. And, what could be better than sharing stories with a bunch of great ladies as we walk back for our cooldown??

My family and I had a fantastic time in Florida! But, all good things come to an end. Three weeks into our trip, we found out we had a sewer backup at home! Yuck, right?? Yep. Luckily, we were able to contact a restoration company and have them come out to the house and get started with the cleanup before we got home. Our basement is currently ripped apart! Then, a week or so later, we get a call that our freezer somehow was accidentally unplugged. Yikes! A freezer full of spoiled meat. At least our freezer was plugged back in by the time we got home, so there was no smell. Such a waste of good food though! The first morning back, we opened our cereal drawer to discover we had visitors while we were away!! Mice in the kitchen. Now, I don't hate mice - I just hate how they have to leave poo everywhere. If they just didn't poo everywhere, I think I'd be okay with them! Anyways, a lot of time was spent disinfecting and emptying drawers and cupboards - what a big job! Thankfully, my hunter/gatherer husband was able to get rid of the little rodents. And, with all the rain that fell while we were gone, we had waist-high weeds in the gardens. So, things have been a little hectic, to say the least, since we got home.

The absolute worst news though, was that my mother's back problem had escalated to the point of her being admitted to the hospital, and that's where she has been for the last 9 days now. Today they transferred her to another hospital where they specialize in rehabilitation, so at least that's some good news. Positive thoughts for my Mom everyone!! Mom, please get better soon!

With all of this going on at home, my long runs that I need to train for my Half-Marathon are suffering! Really, really suffering!!! Friday is supposed to be gorgeous. So, I think my plan is going to be to run 7k before my running group at 6.30pm. Wish me luck with this!

I have to admit that not only are the long runs suffering, but so is my housework. Good Lord!! Where is all this laundry coming from?? I still have some stuff to unpack from my trip, and I've been back for two weeks now! And, the house is a disaster. I think my plans for the weekend are pretty much sealed. It will be a great feeling to just get it all done though and feel the satisfaction of a neat, clean house after this crazy last two weeks. Order is very calming!

Okay, enough about bad news...Now for the good news, no, let's say AMAZING news! Plans are in the works for a September Bootcamp, and maybe an October one too! I'll keep you all up-to-date once I have all the juicy details. If you have suggestions, I'd love to hear them. Comment on this blog, or email me with your suggestions - I'd love to hear what you have to say!

Bye for now,
Dawn :)

Summer Holidays!

http://www.dawnlinklater.com/1/post/2010/07/summer-holidays.html

http://www.dawnlinklater.com/1/post/2010/07/summer-holidays.html#comments

Uncategorized

Hi Everyone!I hope you are all having a fantastic summer!

I headed out for a run a day or so after our arrival, after carefully mapping out a 7km loop that would bring me back to the house on www.mapmyrun.com. (Great website!) Let me just say, that I have never sweat so much in my life! Sorry to gross you out, but honestly, I have just never experienced anything like that before. I was well-hydrated, but it made no difference, sadly, the heat just did me in.

After realizing there's just no way to run in this heat (for me, that is), it was on to Plan B!
I had already scoped out a Pilates studio in Fort Myers, since I knew I wouldn't want to miss it for too long. I prebooked my sessions before our arrival, to ensure I would stay committed! Luckily, I found a great studio, and an amazing Pilates instructor, Bridget Kolshak. http://pilatesfortmyers.web.officelive.com/aboutus.aspx I've been going there twice a week for classes, Mondays is the Reformer class and Wednesdays is the Tower class. I'm really enjoying Bridget's classes, and all the fun ladies who come to her classes. They all are so nice and funny, and just crack me up! (Which, as you all know, helps when you are sweating your butt off! :) )

Also, Plan C. I've joined a gym in Cape Coral, about 15 minutes from the house, where I'm running on the treadmill and taking fitness classes. Happily, it's nice and air-conditioned in there, and I'm getting lots of great new ideas for my upcoming September and October Bootcamps!

Last week, in Pilates I overheard Bridget talking about needing someone to fill in a spot for a unique new program her and a friend were thinking of introducing. It turns out that her friend Lauren owns a paddleboarding business here in Fort Myers, Paddleboard SWFL https://paddleboardswfl.com/Our_Story.html

You're probably wondering, what's the unique new idea? Paddleates. A FUSION of Paddleboarding and Pilates. Well, I was all over that idea! Spot filled!!

So, this past Saturday morning, I was up bright and early to drive to Bowditch Beach, very eagerly anticipating what lay ahead! I love a good adventure and trying new things, so this was right up my alley. Thank Goodness for my GPS, which got me there right on time - 6.20am! I met the rest of the ladies, and after a quick lesson from Lauren on how to mount the board, and a few safety items, off we paddled!

I have to admit, at first I was a little panicked! I was wondering what on earth I had gotten myself into. That feeling lasted only about a minute though. As my legs got used to the slight instability of the board and motion of the ocean (hey, that rhymes!), I looked ahead and saw the sun coming up. It was just gorgeous. Gorgeous, and peaceful. It just felt so cool standing there on the ocean, watching the sun come up! Very surreal.

It gets even better! I paddled to get a little closer to the instructor, Lauren. As I got the hang of paddling, the easier and more comfortable it felt to be on the board. We paddled a little more out into the bay, and Lauren pointed about 10 feet ahead of us. Dolphins!! I had been told that we may see some, but didn't want to get my hopes up in case I didn't see any. But, there they were! I saw two of them. First, one poked his head out of the water and looked at us. Then, him and another one kind of swooped out of the water in front of us - in unison. They were very graceful, and so cute!! I think they were checking us out to see what we were up to. And, I'd like to think that maybe they were welcoming us to their ocean!

A few moments later, Lauren brought our attention to some big, flat circles on top of the water, a distinct difference from the usual pattern of the waves. These, she told us, were manatee "footprints". It turns out that as the manatee manouvres through the ocean, it presses it's tail down, creating a vortex of some sort, which then creates this flat pattern of circles on the surface. Very cool!

We continued paddling further into the bay. When we were all close enough together, Bridget led us through our Pilates/Paddleates moves. It was awesome. The moves were more challenging than if we were doing them on a stable surface, but definitely doable. Shockingly, I didn't fall off even once!! But, the water was absolutely warm and I wouldn't have minded if I did fall off! This is something I would love to do again and again.

Congrats to Bridget and Lauren for coming up with such a unique blend of outdoor fun, and fitness! And, thank you both for an amazing experience that I will never forget!

For your amusement, I have attached some photos that Lauren took. Hope you like the pics.

And, if you ever find yourself in the Southwest Florida/Fort Myers area, I highly recommend you give Paddleboarding, or Paddleates a try!!

<img src="http://www.dawnlinklater.com/uploads/3/7/3/0/3730454/8172306.jpg" style="margin-top: 10px; Well, maybe they were moths, but they were still pretty! That's one thing I love about running outside, especially on the trail, you just never know what you will see. And smell - the last couple of months there have been a bunch of shrubs (not sure what they are) but they have been in bloom and smelled amazing! That always puts a smile on my face!

New 4-Week Walk to Run Program, beginning in August ...
ALL participant fees are going to The Canadian Diabetes Association, CIBC Run for the Cure, or The Weekend to End Women's Cancers!

I've had a lot of you asking me when and if I'll be organizing another Walk-to-Run Program. I decided on my run today, that I will offer a 4 Week Walk to Run program in August. Since I had so much fun with my Walk to Run group in the spring, and since I'm FUNDRAISING -
I decided that every cent I make from this new 4-week program will go to charity!!

Details

The program will begin on Monday August 9th at 6.30pm, and end on Friday September 3rd. The meeting place will be the Elma Memorial Community Centre. We will run every Monday, Wednesday and Friday (except August 13th - I'm away that weekend). Each run will begin with a 5 minute brisk walk to warm up, as we walk to the beginning of the trail. We will cool down and stretch together after every run.

If you are a beginner runner, the first week, we will start with running basics, and just a bit of running. We will gradually increase our running time, until at the end of the 4 weeks, you will be running most of a 5k! I will also provide you with a package to review with all the information you need to get started, and answer any questions you may have.

If you are already a runner, and wish to join us, you are more than welcome! We would love to have you. If you would like to work up to a 7k or 8k run, I can place markers along the trail so you know where the 7k and 8k point are.

Running with a group is truly inspiring! I had so much positive feedback from all of my runners in my spring running group, and I've missed the group since it's been finished! It's a great way to meet people who have the same goals as you. And, it's a great bonding experience! :)

The cost of this program will be $50 per participant - as mentioned it will go to one of the above charities that I am fundraising for. You can let me know which one you choose!

As you may know, I'm training to run a Half Marathon in October. I joined Team Diabetes for the GoodLife Marathon in Toronto on October 17th. I'm going to raise $350 to participate. To sponsor me for the marathon, and join the running group, please visit

https://ocp.diabetes.ca/Pledge/csPersonalPage.asp?tId=14447&oId=12325198 and donate your $50. If you visit this page and see that I've reached my $350 goal, then

please visit my Weekend to End Women's Cancer site, where I have about $220 left to reach my goal of $2000.
http://www.endcancer.ca/site/TR/Events/Toronto2010?px=2993615&pg=personal&fr_id=1440

If I have already reached my $2000 goal, then first, Yay!! You can give me your money and I will put it towards the $100 I'm raising to run 5k for the CIBC Race for the Cure on October 3rd.

Speaking of the CIBC Race for the Cure, would you like to join me? If you are going to join the August Walk to Run Program, and keep up your training in September, why not complete a 5k? We will have so much fun!! And, it's only at Bingeman's, so, not too far to go!

Last Thursday, on the day my son turned 15, I ran 10k for the first time ever! It was a great day, and I happened to run past one of the girls from my spring running group on my way out. She was just finishing up her run, and was going super fast! Way to go, Sarah! The first 5k was great. After that though, it got a little tougher! I should have brought some water with me, but didn't. I stopped to walk for a minute at about the 7k point, then again at about 9k point. Then I booted it as fast as I could to the finish. My time for the 10k still ended up being an hour + 20 minutes, but I was just glad I did it! If anyone ever told me on the day my son was born 15 years ago that I'd run 10k sometime in the future, I'd have said "You're CRAZY!", since I just never thought I would. Just goes to show, you NEVER know what you can do until DECIDE to do it, PLAN and TRAIN, then DO IT!

I read a quote today from someone who said distance running is 90% mental, and 10% physical. This is sooo true! I find it much more of a mental challenge. Sure, it is physically challenging too, but your mind is what's telling you to stop. And your mind is controlling your body. See what I mean??

If you would like more details about the new program, or have any questions, please feel free to post a comment to this blog, or you can always email me at dawnlinklater@msn.com

Some very simple dinner ideas...

http://www.dawnlinklater.com/1/post/2010/06/some-very-simple-dinner-ideas.html

http://www.dawnlinklater.com/1/post/2010/06/some-very-simple-dinner-ideas.html#comments

Uncategorized

I've had some clients today asking me about simple recipes. I tend to buy a lot of the family-sized packages of the skinless boneless chicken breasts when they go on sale, then freeze them. Each week, I take a package out of the freezer and marinate them. Then my hubby grills them all up. We then put them in a large ziploc bag in the fridge. We use them through the week for things like chicken wraps, a quick dinner if we don't have time to cook, chop them up and add them on a nice salad, etc.

To marinate your chicken breasts, here are a few of my favourite ways...
- combine a few tablespoons of olive oil with two tablespoons of balsamic vinegar
- olive oil and rosemary
- olive oil and lemon juice
- balsamic tomato pesto (I use the President's Choice brand)
- regular green pesto (again President's Choice)
- I used to use low-fat italian salad dressing which worked too

Remember that one Canada's Food Guide serving of protein is equal to 2.5 ounces or one-half cup. Also, a snap to grill. Easy and delicious!

Shrimp
I love shrimp. It's also low in fat, and easy to prepare. And, if you can get it on sale, inexpensive. I usually buy the raw kind that you peel yourself. It thaws out in just a couple of hours, or you can run it under cool water to speed up the process. I lay mine in a flat layer in a shallow baking dish. In a little bowl, I wisk together 3 tbsp of olive oil, about a quarter cup of white wine, and a teaspoon of chopped garlic (that I keep in the fridge). Add a tiny pinch of sea salt. If you have a little parmesan cheese, you could sprinkle some on. I then use a silicone basting brush to spread this mixture equally over the shrimp. It then goes into the oven at about 375 F until it turns pink (about 8-10 minutes). You can serve this over brown rice, or over whole-wheat pasta that has been tossed in a bit of olive oil and pesto (if you like pesto). Or, it makes a great appetizer all on it's own!

Burgers
On a nice summer's day, there's nothing more satisflying that a delicious, juicy burger! Usually, if you are calorie-conscious, you may feel guilty indulging. Now, there's no need to feel guilty! President's Choice has come out with a fantastic burger that is tasty and fairly low in calories. It's their Blue Menu Black Angus Burger. Give it a try and let me know what you think.

Don't be fooled into buying the Blue Menu "Burger First" Buns which are very thin, leading you to believe that they are lower in calories. They have about the same caloric content as most other buns! Get yourself a nice multi-grain bun to go with your healthy burger, top it off with lots of freshly sliced tomato and romaine lettuce, some onion, and enjoy!

Salmon
I love salmon! I usually eat it at least once, if not twice per week. In the winter, I usually cook salmon in the oven with sliced lemon, a little pinch of sea salt, and some freshly ground pepper. Now that it's barbeque season, we prefer to barbeque it. We place it on a large sheet of tin foil, and prepare it as I mentioned above. Or, it is delicious with the President's Choice Balsamic Tomato Pesto or the PC regular green pesto. Just spread the pesto on the salmon, use the excess tin foil to fold over the salmon like a little parcel, and grill until cooked. You will know when it's fully cooked when the salmon is the same colour all the way through. Enjoy!

Eggs
If you're stuck for an idea for dinner, forgot to take your meat out of the freezer, or just don't have time to prepare any of the above, eggs are a great option. Make yourself a quick omelette with a couple of eggs, toss in a few veggies and you're good to go! If you take a few minutes once a week to hard boil a dozen eggs, they make a great topping on a salad. Or, an egg sandwich. Or, a snack. They're perfect in your lunchpail! Sometimes I chop up my hardboiled eggs and toss them with about a teaspoon of olive oil. Then I sprinke seasoning on them. Depending in my mood, it may be a mediterranean seasoning, a little ground cayenne pepper, or some curry powder. The olive oil helps the seasonings stick to the eggs and makes it a little less boring,

The Canada's Food Guide suggests that two eggs equal one serving of protein. If you are watching your calories, consider using four egg whites with only one of the yolks.

Pizza
These days, when ordering pizza, feel free to customize your pizza! For example, when I order pizza for our family, I order a regular pepperoni pizza for my kids (who don't need to watch calories - lucky them!). But for my husband and myself, I order a "very thin crust pizza, with only half the cheese and triple mushrooms". Now, this may sound gross and disgusting, but it's actually very good! Half the cheese is still a fair amount of cheese. And I actually prefer the thin crust, since it gets a little crispier, and that's how I like it. If I wanted, I could go a step further, and get a multigrain or whole wheat crust. But, for now, I'm sticking with the normal crust. Note: When ordering pizza, skip the dip!! It really doesn't need to be dipped...

Salads
I always have the large containers of President's Choice Organic Baby Spinach and Mesclun Mix or Mixed Greens with Herbs in the fridge, ready to go. It just makes having a salad with dinner so much easier. Sometimes I'll throw in some grape tomatoes and a little goat's milk cheese. Other times, I'll add raspberries or strawberries with a few walnuts into the salad. I also love chickpeas or beans in a salad. Chopped, hard boiled eggs go really well on a spinach salad. Or you can toss some shrimp or chicken into the salad, to make it more of a meal. I tend to make the same homemade salad dressing all the time, see one of my previous posts for the recipe. It goes well with every salad!

I love grilled veggies! You could try slicing zucchini, eggplant, tomatoes, red/green/yellow peppers, portabella mushrooms - those are just a few! Just brush with a little olive oil and garlic. Invest in some salt-free seasoning, ie. Mrs. Dash. It adds delicious flavour to grilled veggies.

Another thing that is delicious grilled is pineapple. Grilling brings out the sweetness of the pineapple and somehow changes the flavour.

Side Dishes
Certain things can be made in advance to save you time and effort at dinner time. For example, brown rice can be cooked and kept in an airtight container in your fridge for about 5 days. So, if you plan to make rice, make a double batch and use what's left over a few days later in a completely different dinner. To add a little different twist to your rice, try cooking in other fluids besides plain water. Some examples are:
- low sodium chicken broth
- low sodium tomato juice
- coconut milk (add in curry powder to taste)
- butternut squash soup (you will need to add extra water)

Same goes with whole wheat pasta. Make a double batch, store what you don't use in the fridge for up to 5 days. Just toss it with a minimal amount of olive oil before refrigerating, and it will help to keep it from drying out. Or, you could reheat it in a frying pan with a little low-sodium chicken broth or water, which would eliminate any dryness. For variety, consider making couscous. Keep in mind that one serving of pasta, rice or couscous = one half cup, according to the Canada's Food Guide.

What's your go-to healthy summer dinner? I would love to hear your ideas!

Happy Cooking!

June - Lots of things going on!

http://www.dawnlinklater.com/1/post/2010/06/june-lots-of-things-going-on.html

http://www.dawnlinklater.com/1/post/2010/06/june-lots-of-things-going-on.html#comments

Uncategorized

Wow, I can't believe it's June 10th already! It's a terrific group of participants, each with the same goal. To get in better shape by working out for a solid hour, 3 times per week, and eat as clean as possible. Also, I've asked the Boootcampers to do 30-45 minutes of cardio on the days they aren't at Bootcamp. I already have a few Bootcampers who have a 4+ pound weight loss! Way to go!!

I'm currently planning for another 30 Day Bootcamp in September, and maybe another in October. I would LOVE to hear YOUR feedback - do you have any suggestions for me? What would you like to see? Would an early morning Bootcamp class work better for you? Or are evenings better? Please email your ideas to me at dawnlinklater@msn.com. Thanks in advance!

Guess what...I'm going to be running a half-marathon! Yes, that's right. I can hardly believe it myself! I signed up last night for Team Diabetes Canada - I will raise $350 for the Canadian Diabetes Association before the middle of September. So, on October 17th, I will head off to Toronto and complete my first half-marathon. It's a little over 21k. It's run by GoodLife Fitness.

You may be thinking to yourself - "Why on earth would she want to do that??!".

Here's why...

The last couple of years, I've been doing things that are completely out of my comfort zone. I love wondering to myself..."I wonder what it would be like to do that..." Then a crazy little voice inside my head tells me "Do it and find out for yourself!" That crazy little voice has been paying off - so I keep listening to it! The voice has never steered me wrong!

Do you have a fitness "Hero" who inspires you? I do. My Fitness Hero is Tosca Reno. Here's a few tidbits of information about Tosca. She's Canadian - woohoo! She's 50 years old. She often appears on the cover of Oxygen Magazine (one of my faves!) In her early forties, she completely transformed her life. She's now the best-selling author of the Eat-Clean Diet books. Read her story at www.toscareno.com. Anyways, the reason I bring her up is that a few nights ago, I saw on her blog that she's going to be running in the same half-marathon. Her post was entitled something like "It's half-marathon time, JOIN ME!" I checked out the information and read all about it, and I thought WHY NOT?? I didn't want to just impulsively sign myself up, right then and there. Instead, I took a few days and really thought about it. I talked to my amazingly supportive hubby (what a great guy!!), and finally last night, signed up. The half-marathon happens to be just two days before my birthday, so I am considering this my birthday gift to myself.

Another blog that I love reading is the www.ohsheglows.com blog. Angela Liddon (who runs Glo Bakery) blogs about great recipes and her fitness accomplishments. She completed a half-marathon a few weeks ago and blogged, in detail, all about it. Since I read her blog, I had been kind of thinking to myself "Wow, that would be so cool to do!". Her honesty about her experience with the half-marathon helped me make my decision to do it.

I also downloaded from www.personalrunningtrainer.com his 10 Weeks to Half Marathon training program. It's basically a 10 week program that you run three times per week. You follow the program, and at the end of the 10 weeks - you are prepared to run the half-marathon. You have to be able to run 5k before starting the 10 Weeks to Half Marathon though. I'll let you know how it works for me!

And, if you would like to join me, please let me know!

It's going to be a very busy fall season!

Coming up on September 11th & 12th is the Weekend to End Women's Cancers. This is a 60km walk, over two days through the streets of Toronto. All funds raised go to the Princess Margaret Hospital in Toronto, which is one of the Top 5 Cancer Research Insitutes in THE WORLD! I walked the 60km last September and it was a truly wonderful, amazing, emotional and inspiring weekend. I have about $220 left to raise to reach my goal of $2000 for this year. Whew, almost there!!

Then, one of my favourite clients is going to be running 5k in the CIBC Run for the Cure. I've decided to join her. That run will be on October 3rd, and I will need to raise at least $150.

Then, as I mentioned, I will be raising $350 for the Canadian Diabetes Association for the half-marathon.

Lots of fundraising! I was thinking of a couple of cool ideas. Well, at least, I think they're cool! I was thinking of having a some outdoor Bootcamps at a couple of parks a few evenings in August - where all the money goes towards completing my fundraising goals - first for the Weekend to End Women's Cancers - second for the CIBC Run for the Cure.

Do you think this is a good fundraising idea? Or do you have a suggestion for me? If so, please email me at dawnlinklater@msn.com.

Well, wish me luck with that half-marathon training!

I will leave you with before and after photos of the amazing Tosca Reno and a quote that I am borrowing from her website, since it is so true!

“Whatever you can do, or dream you can, begin it. ">Well, I can't believe it's been six weeks since I've been running with my Walk to Run Group! The time has flown by, and it has been truly amazing to see each and every one of them progress and become runners! I'm so proud of them. We only have two runs left, one tonight and our last run on Wednesday. Congratulations to all of you, you should be so very proud of yourselves!

I absolutely love running with the group, I find that I push myself harder with the group than I do by myself. Also, I might feel a little dorky stretching in the park alone...but there's something about doing it with the group that makes it okay! In fact, on a nice day I absolutely looove stretching in the park after a nice run. It's so peaceful, and breezy. It's a beautiful spot to stretch and cool off.

I'm thinking of running this program again in September, maybe geared more towards beginner runners. So, if you're interested, send me an email and I can let you know closer to September if I move forward with the idea.

I held my Nutrition Seminar and Grocery store tour yesterday for the June 30 Day Bootcamp Program. At the end of it, I was a little tired of hearing myself talk, but I think the participants gained a few tidbits of information that will help them reach their goals. Everybody left with a 30 day food journal, which I will be looking over with them at a weekly 20 minute nutrition coaching session, where I will also weigh them in. Can't wait!! :)

______________________________________________________________________

Now I will share a delicious recipe with you, which is healthy, spicy, and one of my favourites!

Sweet Potato Fries with Spicy Curry Dip
(Yes, sweet and spicy - all at the same time! :))

Ingredients:
McCain Frozen Sweet Potato Fries (unless you prefer and have time to make your own)
Dip:
1/2 cup of Greek Yogurt (I use Liberte - available at Cowan's in Listowel)
1 tsp. curry powder
1/2 tsp. paprika
1/2 tsp. ground cayenne pepper
1 tbsp. ketchup
1-2 tbsp. mayo (you could probably eliminate this)

Preheat your oven to 375 degrees. (I use my toaster oven, and it's perfect for this)
Mix together all of your dip ingredients, and let it sit as your oven preheats and your Sweet Potato Fries cook. This allows the flavours to blend together. This dip is quite spicy, but you can change the spiciness of it by decreasing the amount of the spices that you use.

Check the fries often, they tend to cook faster than regular frozen fries. I love it when they get a little blackened and crispy though, no soggy fries for this girl!! They take about 12-15 minutes in my toaster oven, but sometimes I put them in before the toaster oven is preaheated, so, for me, the cooking time changes depending on that.

I have to admit, this is another dish that I ate at Oliver & Bonacini in Waterloo. I couldn't stop thinking about it, and had to recreate it for myself at home. It turned out different, but just as good as theirs, if I do say so myself. :)

Sometimes, I double the dip recipe, and put the other half in the fridge. I also looove dipping cocktail shrimp in this dip! Yummmmm!!

Have a great day! :)

Taking a little time for yourself!

http://www.dawnlinklater.com/1/post/2010/05/taking-a-little-time-for-yourself.html

http://www.dawnlinklater.com/1/post/2010/05/taking-a-little-time-for-yourself.html#comments

Uncategorized

This past weekend was such a great time! We do a lot of work in the community, including organizing many Paddyfest activities, raising funds for Cystic Fibrosis, helping arrange local Blood Donor Clinics, among MANY other things!

Once a year, our Club goes on a "Mystery Trip Weekend" that is organized by two members of the group. They tell you how much the whole weekend will cost (this includes your food and accommodations, and all planned activities), and the date of the trip. That's all you get to know, until the weekend unfolds and you experience it!

This past weekend was our Mystery Weekend. I was so torn about whether to go, because it also happened to be the weekend of the North Perth Home Show, which my hubby was exhibiting in. Ultimately, after a lot of thought, I decided to go on the Mystery Trip, and I'm so glad I did! Sometimes, you need a weekend away with the girls, where all you have to do is be there and have a great time.

The trip started on Saturday morning when I was picked up at my house by a van filled with my Kinette friends. We toured a historic jail and had an awesome lunch in Goderich, then visited a famous bakery for some yummy cream puffs (really, really good!!) went shopping in beautiful Bayfield, made our own gorgeous necklaces at a cute little boutique, then ended up a the fabulous Oakwood Inn in Grand Bend. At the Oakwood Inn we enjoyed excellent service, and the best food I've had in a really long time! After that, it was off to the hot tub and pool for more relaxing, and a whole lot of laughs. Honestly, my face was so sore from too much smiling and laughing! As my one friend pointed out, those muscles need to be exercised on a regular basis too!

Anyways, yesterday started with a wonderful breakfast at the Oakwood. Then back to Bayfield for some shopping, before stopping for a perfect picnic lunch in a beautiful park overlooking Lake Huron. The water was so blue!!! From there, we were on to our next activity. What was it, you ask? Horseback riding!! We stopped at Home on the Range in Londesborough, which is about an hour from where I live. They had gorgeous horses all saddled up and ready to go, just waiting for us! I have NEVER ridden a horse before. I picked a chestnut coloured horse named Thunder. He was beautiful!! And I think he liked me...he was so sweet and gentle, and I just had the BEST time. I was a little nervous at first, but these horses are completely trained and just follow each other all along the nature trails that run all over the property at Home on the Range. Horseback riding through the woods was absolutely breathtaking, beautiful, and I felt so in touch with nature! I'm definitely going back there, and soon!

Anyways...the point of this blog post is not to brag about what a great time I had, although I do have a smile on my face as I recount these memories. The point is that when I got back home to my family yesterday afternoon, I felt so RECHARGED! Everyday life is so hectic, running here, going there, appointments here and there, planning this and planning that, neverending laundry and meals to be made - always go, go, go!! We all need to take a little time off here and there and RECHARGE OUR BATTERIES!

So, if you get the opportunity to step out of your everyday, crazy, hectic life for a day or two, go for it!

For more information about the horseback riding, please visit
